ingredients

  • Slaw:
    • 1 bag cole slaw mix
    • 1 red bell pepper
    • 1 green bell pepper
    • 1 yellow bell pepper
    • 1 jalapeno chile pepper, or more to taste
  • Dressing:
    • ½ teaspoon salt
    • 5 cloves garlic
    • ¼ cup jarred jalapeno juice
    • ½ cup cider vinegar
    • cup sugar
    • 2 tablespoons dijon mustard
    • 2 tablespoons olive oil
    • 2 tablespoons jarred jalapenos, chopped
    • ¼ cup hot salsa, or hot sauce
    • ½ teaspoon celery seed
    • ¼ teaspoon ground pepper
    • cup sunflower seeds

directions

1. Pour cole slaw mix into a large bowl. De-seed the peppers. Cut up bell peppers so they look like matchsticks (about 1-1/2 inches long and 1/8 inch wide). Mix into cole slaw mixture. Dice jalapeno and mix in with cole slaw and bell peppers.
2. In a small bowl, mash garlic cloves with salt to make a paste. To the garlic paste add jalapeno juice, cider vinegar, sugar, dijon mustard, olive oil, chopped jarred jalapenos, salsa, celery seed, and black pepper and mix well.
3. Toss the cole slaw/pepper mixture with the dressing. Right before serving, add the sunflower seeds and toss again.
