  • 2 pkgs enchilada sauce mix
  • 6-ounce cans tomato paste
  • 2 lbs. lean ground beef
  • 12 6-inch corn tortillas
  • 20 ounces monterey jack-colby cheese, shredded

directions

1. Prepare enchilada sauce (both packages) according to package directions. Sautee ground beef until brown; drain. Mix half of the enchilada sauce and half of the grated cheese into the ground beef and stir. Remove ground beef mixture from heat.
2. In the bottom of a 9" x13" baking dish arrange 4 tortillas (you may tear them in half to make them fit better). On top of the tortillas spread 1/3 of the ground beef mixture. On top of the ground beef mixture spread 1/3 of the remaining cheese. Spread 1/3 fo the remaining enchilada sauce over cheese. Repeat layers two more times. Bake uncovered in 350 degree oven for 45 minutes.
