ingredients

  • ½ lb. mushrooms, sliced
  • ¼ cup butter
  • 1 lb. zucchini, julienne sliced
  • 1 cup whipping cream
  • ½ cup butter
  • 1 lb. fettuccine, dried
  • ¾ cup parmesan cheese, grated
  • ½ cup parsley, chopped

directions

In large deep skillet saute mushrooms in butter over moderatly high heat for 2 minutes. Add zucchini, cream, and butter. Bring to boil and simmer for 3 minutes. Prepare and drain noodles in large colander. Add it to the skillet with parmesan cheese and parsley. Toss the mixture with wooden forks, lifting the pasta and combining the mixture well. Transfer the mixture to heated platter and serve with additional parmesan cheese.
