  • ¼ cup butter
  • 1 onion, chopped
  • ¼ cup all-purpose flour
  • 2-⅔ cup half and half
  • 4 cups cheddar cheese
  • 1 tsp salt
  • ¼ tsp pepper
  • ¼ tsp garlic powder
  • 5 russet potatoes, sliced into 3mm slices

directions

1. Preheat oven to 400 degrees F. Coat a two-quart casserole dish with cooking spray.
2. In a medium-size saucepan, melt butter over medium heat. Saute onions until translucent. Mix in the flour and stir constantly until mixture darkens slightly (2-3 minutes). Stir in half and half. Cook until mixture has thickened. Stir in 2 cups cheese all at once, and continue stirring until melted, about 30 to 60 seconds. Season with salt, pepper, and garlic powder.
3. Mix sliced potatoes into sauce. Layer potato mixture into casserole dish with remaining cheese. End with cheese. Bake covered in preheated oven for 1 hour. Remove cover and bake for 30 more minutes. Serve.
