- ¼ cup butter
- 1 onion, chopped
- ¼ cup all-purpose flour
- 2-⅔ cup half and half
- 4 cups cheddar cheese
- 1 tsp salt
- ¼ tsp pepper
- ¼ tsp garlic powder
- 5 russet potatoes, sliced into 3mm slices

1. Preheat oven to 400 degrees F. Coat a two-quart casserole dish with cooking spray. |
2. In a medium-size saucepan, melt butter over medium heat. Saute onions until translucent. Mix in the flour and stir constantly until mixture darkens slightly (2-3 minutes). Stir in half and half. Cook until mixture has thickened. Stir in 2 cups cheese all at once, and continue stirring until melted, about 30 to 60 seconds. Season with salt, pepper, and garlic powder. |
3. Mix sliced potatoes into sauce. Layer potato mixture into casserole dish with remaining cheese. End with cheese. Bake covered in preheated oven for 1 hour. Remove cover and bake for 30 more minutes. Serve. |
