  • 1 cup oatmeal
  • 1 tablespoon oil
  • 6 tablespoons molasses
  • ½ tablespoon salt
  • 2 cups water, boiling
  • 1 package active dry yeast
  • ¼ cup water, warm
  • 2 cups flour, all-purpose
  • 2 cups whole wheat flour

directions

1. In a large bowl combine the oatmeal, oil, molasses, salt, and boiling water. Let mixture sit for 45 mins. to 1 hr. When mixture is luke warm, combine dry yeast with warm water and set aside.
2. In large bowl add 1 cup white flour to liquid, stir; then add 1 cup whole wheat flour, stir; 1 cup white flour, stir; and a final 1 cup whole wheat flour. Add yeast mixture. Continue to add unbleached white flour to the mixture until it forms a soft, round ball. Knead this mixture vigorously for 5 to 10 minutes.
3. Place ball in oiled bowl and turn once so that the ball is completely oiled. Cover and let rise in warm place for about 45 mins. to 1 hr.
4. Punch dough down and divide into four sections. Spread each section into an oblong shape and roll up and tuck in ends to fit two, greased bread pans. Let dough rise in pans, uncovered, for 45 mins. to 1 hr.
5. Bake bread at 325 degrees for 25 minutes or until the top of crust forms as hollow shells to the tap of your knuckles.
