- 2 cups sugar
- 2 cups flour
- 2 teaspoons baking soda
- 2 eggs
- 1 20 oz can crushed pineapple, with juice
- 1 cup pecans, optional
- 1 8 oz pkg cream cheese
- 2 cups powdered sugar
- ½ cup butter
- 1 teaspoon vanilla extract

Mix sugar, flour, soda, eggs, pineapple (juice and all), and pecans. Pour into greased and floured 9 x13-inch pan. Bake at 350 degrees for 40 to 45 minutes. While cake is baking, prepare icing as follows: Mix cream cheese and butter; add powdered sugar and vanilla. Frost cake as soon as it comes out of the oven. |
