  • 1 lb. lean ground beef
  • 1 egg
  • ¾ cup saltine crackers, crumbled
  • ½ teaspoon oregano
  • ¾ cup tomato sauce
  • 1 teaspoon salt
  • teaspoon black pepper
  • 2 cups mozzarella cheese, shredded
  • ½ cup onions, chopped

directions

1. In a medium bowl, mix together ground beef, egg, crackers, oregano, onion, tomato sauce, salt, and pepper.
2. Turn mixture onto wax paper and pat into a 10" X 12" rectangle. Spread shredded cheese evenly over meat. Starting with the short end, roll meat jelly-roll fashion into loaf, pressing ends closed.
3. Place, seam-side down, into loaf pan. Bake for 1 hour at 350-degrees.
