ingredients

  • 8 cups yellow summer squash, cooked, sliced, and drained
  • 6 slices bacon, cooked and crumbled
  • 2 eggs
  • 1 cup cottage cheese
  • 2 tablespoons flour, all-purpose
  • 2 teaspoons chicken bouillon, instant
  • 1 cup cheddar cheese, shredded

directions

In large bowl, combine eggs, cottage cheese, flour, and bouillon. Add squash; mix well. Turn into greased 12 X 7 X 2-inch baking dish. Top with cheddar cheese and bacon. Bake 20 to 25 minutes in 350-degree oven. Let stand 5 minutes before serving.
