- 2 15 oz cans very young petite peas, recommended: Lesueur
- ½ cup onions, chopped
- 4 eggs, boiled and crumbled
- salt, to taste
- black pepper, to taste
- 6 tablespoons mayonnaise
- chopped pimiento, optional

In a colander, drain peas very well. Place drained peas in a medium bowl. Add the onions, crumbled eggs, and mayonnaise, tossing to combine and coat peas. Season to tast with salt and pepper. Add pimento, if using. |
