ingredients

  • 2 15 oz cans black-eyed peas, drained and rinsed
  • 2 tomatoes, chopped and drained
  • 1 medium sweet onion, chopped
  • 2 jalapeno chile pepper, chopped
  • 1 cup italian salad dressing
  • ¼ cup cilantro, chopped
  • cayenne pepper, to taste
  • 2 avocado, peeled, pitted, and chopped

directions

In a large bowl, mix black-eyed peas, tomatoes, sweet onion, jalapeno peppers, Italian dressing, and cilantro. Add in cayenne pepper to taste. Stir in the avocados just before serving.

Notes

Serve with 'scoop' tortilla chips.
