  • 1 head cauliflower, cut into large florets
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1-¼ cup milk
  • 1 cup cheddar jack cheese, shredded
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • 1 cup cheddar jack cheese, shredded
  • ¼ cup parmesan cheese, grated
  • ¼ cup italian style bread crumbs
  • 2 tablespoons butter, melted

directions

1. Preheat oven to 375 degrees F.
2. Cook the cauliflower florets in a large pot of boiling salted water for 5 to 6 minutes, until tender but still firm. Drain.
3. In a medium saucepan, melt 2 tbsp butter over medium heat. Add flour, stirring constantly until flour starts to brown. Pour in milk and whisk until smooth and thickened. Remove from heat and add salt, pepper, garlic powder, and 1 cup cheddar jack cheese. Stir until cheese is melted.
4. Combine drained cauliflower with cheese sauce.
5. In an 8"x11" pan, spoon half of cauliflower cheese mixture. Sprinkle with half of the remaining cheese. Repeat.
6. Mix the parmasan cheese with the bread crumbs. Moisten mixture with melted butter. Sprinkle bread crumb mixture over cauliflower.
7. Bake for 30 minutes or until the top is browned.
