ingredients

  • 1 package flour tortillas, large
  • 1 lb. pork sausage
  • 1 10.5 oz bottle mild picante sauce
  • 3 potatoes, cooked and diced
  • 3 eggs
  • ½ onion, diced
  • ¼ lb. mushrooms, sliced
  • 8 ounces cheddar cheese, shredded

directions

Brown and drain sausage. Mix with all ingredients except for the eggs, tortillas, cheese, and potatoes. Scramble eggs in a bowl and add potatoes. Cook eggs with potatoes until the eggs are done. Add sausage mixture. Add cheese last. Cook 'til cheese is melted. Warm tortillas. Roll mixture into tortillas and serve.
