  • 4 tablespoons butter
  • 4 slices bacon, cut into 1/4-inch slivers
  • 1 small onion
  • 1 medium cabbage
  • ¼ cup barbecue sauce
  • salt and pepper

directions

1. Melt 1 tablespoon butter in a skillet. Add bacon and onion and cook until just beginning to brown, 3 to 5 minutes. Drain the bacon and onion, reserving the drippings.
2. Cut the core out of the cabbage and discard. Cut remaining butter into small cubes. Stir barbecue sauce into the bacon and onion mixture. Place bacon and onion mixture into the cavity and top with cubed butter. Paint the outside of the cabbage with baon drippings. Season cabbage with salt and pepper.
3. Wrap with foil except for opening. Fashion foil ring to keep cabbage upright, if necessary. Place in smoker at 225 degrees for 2-1/2 to 3 hours.
