  • 3 tablespoons butter
  • cup onion, diced
  • 3 tablespoons flour, all-purpose
  • teaspoon salt
  • teaspoon black pepper
  • 2 teaspoon garlic powder
  • 1-¼ teaspoon sugar
  • 1 cup sour cream
  • 32 ounces fresh french beans, drained
  • 2 cups french fried onions, Durkees
  • 2-½ cups shredded cheddar cheese
  • ½ cup Ritz crackers, crumbled
  • 2 tablespoons butter

directions

1. Preheat oven to 350 degrees F
2. Dump bag of green beans into boiling water and cook for 20 minutes.
3. Melt 3 tablespoons butter in a large skillet over medium heat. Saute onions in butter until translucent. Stir in flour until smooth, and cook for one minute. Stir in the salt, pepper, garlic powder, sugar, and sour cream. (Add some milk or half and half to the mixture to thin it out a bit if need be. The mixture should be creamy, not stiff) Add green beans, and stir to coat. Mix in 1-1/2 cups of french fried onions and 1-1/1 cups cheddar cheese.
4. Transfer the mixture to a 2 1/2 quart casserole dish. Spread remaining cup of shredded cheese over the top. In a small bowl, toss together cracker crumbs, 1/2 cup french fried onions, and butter, and sprinkle over the cheese.
5. Bake for 30 minutes in the preheated oven, or until the top is golden and cheese is bubbly.
