ingredients

  • 1 lb. italian sausage, browned and drained
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 14 oz can whole tomatoes
  • 1 12 oz can tomato paste
  • 8 ounces lasagna noodles
  • 3 cups ricotta cheese
  • 2 eggs, well beaten
  • ½ cup grated parmesan cheese
  • 2 tablespoons parsley
  • 1 teaspoon salt
  • 1 lb. grated mozzarella cheese

directions

Add first seven ingredients and 1 cup water. Cover and simmer for 15 minutes; stir often. Cook noodles in boiling salt water till tender. Drain and rinse. Mix remaining ingredients, except mozzarella. Layer 1/2 the noodles in 13 X 9 X 2 inch baking dish; spread with 1/2 the ricotta filling. Add 1/2 the mozzarella cheese and 1/2 the meat sauce. Repeat. Bake 375 degrees for 30 minutes, or assemble early and refrigerate or freeze. Bake 45 minutes.
