ingredients

  • 3 eggs
  • 1 8 oz can whole kernel corn, drained
  • 1 4 oz can green chili peppers, chopped and drained
  • 1 cup yellow cornmeal
  • 1 teaspoon salt
  • 1 tablespoon baking powder
  • 1 cup sour cream
  • ¾ cup melted butter
  • 1 cup monterey jack cheese, shredded

directions

Preheat oven to 350-degrees. Lightly grease 9 X 9-inch baking pan. In large bowl, beat eggs slightly. Add corn and chilis; mix well. Stir in rest of ingredients. Turn out into baking pan. Bake 40 minutes or until golden on top and cake tester inserted in center comes out clean. Cut into squares. Serve hot with butter.
