ingredients

  • cooking oil
  • flour
  • 1 whole chicken, cut up
  • 2 cloves garlic, chopped
  • 1 14 oz can marinated artichoke hearts, drained
  • ½ tablespoon butter
  • 2 cups whole tomatoes, canned
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon oregano
  • ½ lb. mushrooms

directions

Dredge chicken in flour, fry in oil until brown. Place in casserole with artichoke hearts. Pour out all but 3 tbsp. of oil; add butter and saute mushrooms, garlic, and spices for 5 minutes. Add tomatoes and saute for a few more minutes. Pour over chicken and bake at 325 degrees for 1 to 1-1/2 hours.
