- 1 whole chicken, cut up
- 2 cloves garlic, chopped
- 1 14 oz can marinated artichoke hearts, drained
- ½ tablespoon butter
- 2 cups whole tomatoes, canned
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon oregano
- ½ lb. mushrooms

Dredge chicken in flour, fry in oil until brown. Place in casserole with artichoke hearts. Pour out all but 3 tbsp. of oil; add butter and saute mushrooms, garlic, and spices for 5 minutes. Add tomatoes and saute for a few more minutes. Pour over chicken and bake at 325 degrees for 1 to 1-1/2 hours. |
