ingredients

  • 6 sweet potatoes, shapely
  • ½ cup butter
  • 1 8 oz can crushed pineapple, in juice
  • 1 cup brown sugar
  • 1 cup miniature marshmallows

directions

Cook sweet potatos in water to cover until nearly tender (about 25 minutes). Cut into 1/2 inch slices. Arrange in greased shallow baking dish. In a saucepan warm pineapple (and juice), butter, and brown sugar until butter is melted. Pour mixture over sweet potatoes. Dot with extra butter if desired. Arrange marshmallows on top of sweet potatos. Bake in 375 degree oven, uncovered for 20 minutes.
