  • 24 ounces ground sausage
  • 2 8 oz pkg cream cheese
  • 1 ½ cups cheddar jack cheese, shredded
  • 30 jalapeno chile peppers
  • 1 ½ lbs. bacon, sliced and cut in half
  • 1 cup brown sugar

directions

1. Preheat oven to 375 degrees F.
2. Cut jalapenos in half lengthwise. Remove the seeds.
3. Place ground sausage in a large skillet. Cook over medium hight heat until evenly brown. Drain and cool.
4. Mix sausage, cream cheese, and cheddar jack cheese in medium bow.
5. Stuff each jalapeno half with cream cheese mixture. Wrap with half slices of bacon. Roll wrapped jalapeno in brown sugar. Secure bacon with toothpicks.
6. Arrange wrapped jalapenos in large, shallow baking dish. Bake in the pre-heated oven for 20 minutes or until the bacon is evenly brown.
7. VARIATION: Instead of brown sugar, coat with barbecue sauce and grill on gas or charcoal grill.
8. VARIATION: Instead of sausage, use chopped smoked pork, coat with barbecue sauce, and smoke popper in smoker. (This is also known as Atomic Buffalo Turds).
