- 24 ounces ground sausage
- 2 8 oz pkg cream cheese
- 1 ½ cups cheddar jack cheese, shredded
- 30 jalapeno chile peppers
- 1 ½ lbs. bacon, sliced and cut in half
- 1 cup brown sugar

1. Preheat oven to 375 degrees F. |
2. Cut jalapenos in half lengthwise. Remove the seeds. |
3. Place ground sausage in a large skillet. Cook over medium hight heat until evenly brown. Drain and cool. |
4. Mix sausage, cream cheese, and cheddar jack cheese in medium bow. |
5. Stuff each jalapeno half with cream cheese mixture. Wrap with half slices of bacon. Roll wrapped jalapeno in brown sugar. Secure bacon with toothpicks. |
6. Arrange wrapped jalapenos in large, shallow baking dish. Bake in the pre-heated oven for 20 minutes or until the bacon is evenly brown. |
7. VARIATION: Instead of brown sugar, coat with barbecue sauce and grill on gas or charcoal grill. |
8. VARIATION: Instead of sausage, use chopped smoked pork, coat with barbecue sauce, and smoke popper in smoker. (This is also known as Atomic Buffalo Turds). |
