- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 1 teaspoon dried sage
- ½ teaspoon dried thyme
- 2 cups white bread, cut into 1/2-in cubes
- ½ cup chicken broth
- ½ teaspoon salt
- black pepper, freshly ground, to taste
- ¼ cup parsley, minced
- 1 lb. ground beef
- ½ lb. ground pork
- 1 egg
- 1 clove garlic, minced
- 4 tablespoons ketchup, divided
- 1-¼ teaspoon worcestershire sauce, divided

1. Heat olive oil in skillet over medium heat. Add onion and saute 10 minutes. Transfer to a bowl and add the sage, thyme, bread, broth, 1/4 tsp salt and several grindings pepper; stir in parsley. |
2. Combine the ground beef and pork lightly with the egg, garlic, 2 T. ketchup, 1 tsp. Worcestershire, 1/4 tsp. salt and several grindings black pepper. |
3. Spray a 9x5-inch loaf pan with a nonstick cooking spray. Pat half of the meat mixture into the pan, spoon the stuffing on top. Then pat the remaining half of the meat on top. |
4. Combine 2 T. ketchup and 1/4 tsp. Worchestershire. Spread on top of the meatloaf. |
5. Bake in 350 degree oven 1 hour, or until done and meat is no longer pink in the center. Let set about 10 minutes before slicing. |
